      <image:caption>Wat heb je nodig? 1 kg rundsvlees met een vetrandje, op kamertemperatuur, in middelgrote stukken gesneden van 4 bij 4cm ★ 2 uien, fijngesnipperd ★ 2 klontjes boter ★ 2 eetlepels bloem ★ 1 eetlepel olijfolie ★ 1 teentje look geplet ★ 2 sneetjes brood ★ 3 eetlepels appel-perenstroop ★ 2 el graantjesmosterd van De Ster, het rode potje ★ Bier: 1 flesje (33cl) Aarschotse Bruine of een gelijkaardig Vlaams roodbruin bier ★ 300 ml rundsfond ★ peper en zout, 2 blaadjes laurier, 4 takjes tijm, 1 kruidnagel Vlees bakken Kruid het vlees met peper en zout. Schroei het in een grote pan op een hoog vuur, in olijfolie en een klontje boter, dicht. Het vlees mag niet doorbakken zijn, maar heeft wel aan alle kanten een kleurtje. Haal het vlees uit de pan en hou ook het vleesvocht apart. Ajuin en look Doe in dezelfde pan nog een klontje boter en verwarm het op een middelmatig vuur. Bak daarin enkele minuten de fijngesneden ajuin en look. Niet bruin bakken! Kruiden, bier en fond Ajuin, look en vlees gaan nu naar een andere pot. Doe er de eetlepels bloem bij, samen met laurier, tijm en wat extra peper. Roer goed door tot de bloem helemaal is opgenomen. Zet de eerste pan met de aanbaksels weer op het kookvuur en roer alles goed los met de Aarschotse bruine. Giet het ingekookte bier samen met de kruidnagel en vleesvocht in de kookpot met het vlees. De fond en de eetlepels stroop gaan er mee in. Garen met de boterham Besmeer de boterhammen rijkelijk met graantjesmosterd (met het rode etiket) en leg ze met de besmeerde kant naar onder op het vlees. Zet het kookvuur zacht, zodat het vlees enkele uren – 2 à 3u- traag kan garen. Hou het in de gaten en roer af en toe. Het deksel hoeft niet op de kookpot. Zo kan vocht verdampen en kan de stoofvleessaus mooi binden. Maar je moet wel genoeg vocht overhouden. Serveer met kroketten en met een seizoenslaatje! Fijne feestdagen, laat het stoofvlees smaken! ★ TIP De dag nadien is het stoofvlees nog lekkerder, doordat de ingrediënten een nachtje goed hebben kunnen inwerken.</image:caption>

      <image:caption>De Ster bestaat 100 jaar, het is het dé gelegenheid om terug te kijken op wat was, mosterdliefhebbers samen te brengen rond de mosterdpot en de blik vooruit te werpen naar wat komen kan. We doen dat met het unieke boek ‘Mosterd met een Ster’. Hierin blikken de vorige en huidige generatie mosterdmakers terug op de Leuvense wortels van De Ster en de uitvalbasis in Lubbeek. Er wordt ingezoomd op het maakproces van dé Hagelandse mosterd. In het boek word je verleid door 20 Belgische chefs met hun mosterdgeheimen in de hoofdrol. De chefs tonen ons hoe veelzijdig en hip mosterd wel is. Want wat is tenslotte mosterd zonder kok… Mosterd heeft al eeuwen haar plaats in onze nationale keuken en niets is zo in onze smaak verankerd als stoofvlees, met daarin een boterham met mosterd.</image:caption>

      <image:caption>Om alle markten te bedienen, hebben we de extra gemaakt. Deze mosterd is pikant en leunt meer aan bij de mosterdsoorten uit de andere mosterdregio’s. Als je een verkoudheid hebt, eet je maar van de zwarte, met zijn vele donkere zaden. Je neus zal er snel van opengaan. Het zijn de zaadjes die de kleur bepalen. Hoe lichter de kleur, hoe lichter de zaden. Gebruik je donkere zaadjes, dan zal het resultaat een donkere, straffe mosterd zijn.</image:caption>
